I've been to Plovdiv several times in winter and summer since I bought an apt in the Pamporovo ski area in 2007 (one of my mistakes). Bulgaria is a Balkan Tuscany at 1/3 the price: great food, great wine, great beaches and varied scenery. You've given some useful tips, so I'll suggest one: rent a bike and take the riverside bike trail.
